Make Cauliflower Rice Yourself: Recipe For The Healthy Low-carb Side Dish

The cauliflower-based vegetable rice is a real insider tip: it’s a delicious alternative to conventional rice – and it’s also low in carbohydrates. Introducing a quick recipe for cauliflower rice.

Have you ever heard of cauliflower rice? Even those who don’t usually care much for cauliflower will be delighted with the vegetable rice as an alternative to conventional rice: cauliflower rice contains few carbohydrates and is therefore a perfect low-carb insider tip. It is also healthy because cauliflower – also called cauliflower or minaret cabbage – contains numerous minerals as well as B vitamins and vitamin C.

And: In the form of cauliflower rice, it hardly tastes like cabbage, but has a slightly nutty taste. This makes it a good vegetable unit for children who tend to turn their noses up at cabbage dishes. Another plus: Cauliflower rice is a recipe for quick cooking, because cauliflower rice is ready faster than conventional rice.

The climate balance also speaks in favor of cauliflower rice as a rice alternative: Cauliflower is a regional vegetable that is in season from June to October and is therefore extremely climate-friendly. During the rest of the year, cauliflower comes from warmer countries like Italy, Spain and France. Rice, on the other hand, is responsible for large quantities of greenhouse gases because of its cultivation method and transport from Asia.

Make cauliflower rice yourself: the ingredients

  • 1 fresh cauliflower
  • 2 tablespoons olive oil or sunflower oil
  • Salt pepper
  • Lime juice and fresh herbs to taste

Prepare cauliflower rice: Here’s how

Remove the outer leaves of the cauliflower and divide the cauliflower into small florets.
Wash the florets carefully and chop them up in a blender. The cauliflower should then be about the size of a grain of rice. Alternatively, you can shred the cauliflower with the grater.
Heat the oil in a large skillet and sauté the cauliflower rice over medium-high heat. After five to seven minutes, the cauliflower rice is done.
Season the cauliflower rice as you like.

Tip: The cauliflower rice tastes extremely delicious if you season it with a little lemon or lime juice and fresh herbs. Fresh cilantro is great when served as an accompaniment to Asian dishes. For a colorful version of the cauliflower rice, you can also sauté diced onions, peppers, peas or corn together with the cauliflower rice.

Cauliflower rice goes well with all the dishes that you usually eat with classic rice. It tastes particularly good as an accompaniment to Asian dishes, in combination with minced meat and as a filling for stuffed peppers.
