Dandelion Honey: This is what you need
It is best to pick the dandelion flowers on a dry day and remove all green. Otherwise, the green parts of the plant will make the honey bitter.
- 2 kilograms of sugar
- 2 lemons
- 1 liter of water
- 300 grams of dandelion flowers
How to make dandelion honey yourself
- First, cut the lemons into slices and place them in a large saucepan with the water and dandelion flowers.
- Boil everything together for 30 minutes. You can leave the brew overnight. This intensifies the taste.
- The next step is to sieve the brew. Squeeze the blossoms and the lemon slices well, possibly separately with a cloth.
- Now add the sugar and boil the liquid for about an hour. Stir from time to time. The brew should steam, but not boil over. Steaming is important to remove the water.
- Do a gel test to check the consistency. To do this, put some of the honey on a spoon and let it cool. A viscous consistency is desired.
- You can tell if the honey is ready when it stops foaming and just bubbles.
- If you accidentally overcook the ingredients, add some boiling water, stir and wait until the desired consistency is reached. Do not use cold water to fill up as there is a risk of splashing.
- Fill the finished honey into clean jars and close them with a lid. Do not fill the glasses completely to the brim.
- The honey may become too solid after cooling. In this case, briefly place the open jar in the oven to warm up, then add some water and stir.
- The honey should not be too thin. The thinner it is, the shorter it will keep. Water content of less than 18 percent is ideal.
- The dandelion honey can be kept indefinitely in a tightly closed jar in a place with constant temperatures.
