Make vanilla pudding yourself – that’s how it works

If you want to make vanilla pudding yourself, you don’t need any special cooking skills – the recipe is very simple.

  1. First, take about seven tablespoons of the milk and stir in the sugar and cornstarch – as smooth as possible and without lumps.
  2. Now separate the egg – there’s a very simple trick for this – and stir the egg yolk into the milk-sugar-starch mixture. You don’t need the egg white for the pudding.
  3. In the next step, scrape out the vanilla pod and add the pulp to the rest of the milk. Now heat them up. Tip:
  4. Rinse the pot with cold water beforehand to avoid burning the milk. By the way: We explain the effect of vanilla on health and psyche in another home tip. Also, don’t throw away the scraped vanilla bean. With it, you can easily make vanilla sugar yourself.
  5. When the milk is hot, add the milk-sugar-starch-egg mixture and bring everything to a boil while stirring constantly with a whisk until the pudding has set. Tip: Of course, you can try in between. But then use a fresh spoon each time – otherwise, the pudding will become liquid again. Saliva contains an enzyme that breaks down starch.
  6. Now you can take the pudding off the stove and fill it in bowls or glasses to cool.
  7. If the pudding has become too liquid, there is no reason to panic. In this case, whip 200 grams of cream until stiff and fold it into the dessert – it’s just how you want it.
