Ingredients for 1 servings:

  • 1 bratwurst, coarse, approx. 100 g
  • 10 g clarified butter
  • 150 ml malt beer
  • 60 g shallot(s)
  • 1 tsp lemon juice
  • ½ lemon(s), zest
  • 20 g sour cream
  • 1 pinch(s) coriander powder
  • n. B. Salt and pepper from the mill

Instructions

Working time approx. 5 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

in malt beer sauce

Pierce the bratwurst several times on all sides. Heat the malt beer and let the sausage simmer for about 10 minutes, then remove it, dry thoroughly, and fry in clarified butter for about 10 minutes until browned. Remove from the pan and keep warm. Finely dice the shallots and sauté in the frying fat, pour in the malt beer, add the lemon juice and lemon zest, and let it reduce slightly for about 3-5 minutes over medium heat. Season to taste with coriander, salt, and pepper, and stir in the sour cream. Heat the sausage briefly in the sauce and then serve. Serve with mashed potatoes.
