Ingredients for 1 servings:
- 2 can/n mandarin oranges (175 g each)
- 230 g flour
- 120 g desiccated coconut
- 2 tsp baking powder
- ½ tsp baking soda
- 1 egg(s)
- 120 g brown sugar
- 1 packet of Bourbon vanilla sugar
- 80 ml vegetable oil
- 125 g natural yogurt or vanilla yogurt
- 250 g mascarpone
- 40 g powdered sugar
Instructions

Drain the mandarins thoroughly in a sieve, reserving the juice, and set aside 14 mandarin segments for the glaze. Chop the remaining mandarins slightly smaller. In a bowl, thoroughly mix the dry ingredients (flour, baking powder, baking soda, and 60g desiccated coconut). In another bowl, break the egg and whisk lightly. One after the other, add the sugar, vanilla sugar, oil, yogurt, 125g mascarpone, and about 30ml of mandarin juice and mix briefly. Now mix in the dry ingredients (only stir until the dry ingredients are moistened!) and finally fold in the sliced mandarins. Depending on the consistency of the batter, you may need to add another 1-2 tablespoons of mandarin juice. Preheat the oven to 160°C (fan oven). Line a muffin tin with paper baking cups and fill with the muffin batter – this will make 12-14 muffins. I prefer to make them a little smaller, as otherwise they are very difficult to remove from the muffin tin (unfortunately, they break very easily). Bake the muffins for about 20-25 minutes on the middle rack (depending on the oven and the actual muffin size). Afterwards, please let the muffins rest for about 10 minutes before carefully removing them from the muffin tin. For the glaze, mix together the remaining 125g mascarpone, 60g desiccated coconut, about 5 tablespoons of tangerine juice, and the powdered sugar. Spread the glaze evenly over the completely cooled muffins. Decorate each muffin with a tangerine. Tip: I have also used white chocolate as a glaze, which also tastes delicious.
