Ingredients for 1 servings:

  • 375 g flour
  • 115 g ground almonds
  • 1 tsp baking soda
  • ¼ tsp salt
  • 3 eggs
  • 250 g sugar
  • 1 lemon(s), the peel
  • 1 tsp oil (almond oil)
  • 1 tsp oil (vanilla oil)
  • 130 g almonds, chopped

Working time approx. 20 minutes; Total time approx. 20 minutes

Jewish pastries

Preheat oven to 180°C. Lightly grease two baking sheets. Mix together the flour, ground almonds, baking soda, and salt. Using a hand mixer, beat the eggs and sugar until light and golden. Then add the lemon zest and the almond and vanilla oils. Slowly add the flour mixture and mix well. Fold in the chopped almonds. Pour the mixture onto a floured work surface and knead thoroughly for 5 minutes. Divide into 2 pieces and form into long, flat loaves. Bake on the baking sheets for 35 minutes. Remove from the oven and let cool for 15 minutes. Once cooled, cut 1 cm thick diagonal slices. Place the slices on the baking sheets and bake for 6-7 minutes on each side, until lightly browned. Let cool. Delicious with coffee, tea, or a glass of schnapps.
