Ingredients for 6 servings:

  • 3 large mangoes, ripe
  • 2 chili peppers
  • 2 bell peppers
  • 1 large onion(s)
  • 150 ml mango nectar
  • 120 ml white wine vinegar
  • 2 tbsp olive oil
  • 1 tbsp, heaped sugar, brown
  • 3 tbsp jam (raspberry or currant jam)
  • ½ tsp cumin
  • ½ tsp sweet paprika powder

Sweet, spicy and delicious

Peel and dice the mangoes. Wash the chilies and bell peppers, and finely chop them along with the onion. Heat the olive oil in a large pan. Sauté the onions, bell peppers, and chilies. Add the brown sugar and let them caramelize slightly. Add the mango and deglaze with the vinegar and mango nectar. Stir in the jam, cumin, and paprika powder and simmer over low heat.
