Mango – mozzarella – rocket – salad

Ingredients for 4 servings:

  • 250g mozzarella
  • 200 g arugula
  • 1 mango(s)
  • ½ bunch basil
  • 5 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 2 tsp honey
  • salt and pepper
  • 3 spring onions

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash and trim the arugula, and spin dry. Wash the basil, shake it dry, and pick off the leaves. Trim and wash the spring onions, and slice into rings. Peel the mango, remove the stone, and cut into thin wedges. Drain the mozzarella, halve it crosswise, and slice it. Arrange the mozzarella, mango, spring onions, and arugula nicely on a platter. Scatter the basil leaves over the top. Mix the honey with the vinegar, oil, and 1 tablespoon of water. Season to taste with pepper and salt, and drizzle the dressing over the salad.
