Mango sauce

Ingredients for 4 servings:

  • 2 mangoes, ripe
  • 2 chili peppers, red
  • 1 bunch of spring onions
  • 1 clove(s) garlic
  • some oil
  • salt and pepper
  • Sugar
  • some broth or orange juice

Peel the mangoes and cut the flesh into small cubes. Peel the garlic, chop finely, and sauté in oil. Add the mango flesh, pour in a little stock or juice, and cook for 15 minutes. Purée for a bit more if desired. I like the sauce not to be completely smooth. Deseed the chilies and finely slice them, and trim the spring onions and finely slice them. Add both to the sauce. Reduce to taste and season with salt, pepper, and a little sugar. This sauce goes best with fish and poultry with rice, but it’s also delicious as a barbecue sauce.
