Maple Pecan Cookies

Ingredients for 1 servings:

  • 180 g butter, soft
  • 185 g sugar, brown
  • 60 ml maple syrup
  • 1 vanilla pod(s)
  • 1 egg(s)
  • 280 g flour
  • 1 tsp baking powder
  • 125 g nuts (pecans), finely chopped
  • n. B. Nuts, (pecans) halved

Instructions

Working time approx. 40 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 25 minutes

Cream the butter and sugar with a mixer until creamy. Mix the maple syrup into the butter mixture. Beat in the vanilla bean seeds and egg. Sift in the flour and baking powder and mix everything into a smooth dough. Divide the dough into two equal portions. Shape each portion into a tight log and roll in the chopped pecans. Let both logs rest in the refrigerator for about 30 minutes. Preheat the oven to 180°C and line two baking sheets with parchment paper. Cut the logs into 1 cm thick slices and, if desired, decorate each slice with half a pecan. Place the slices on the baking sheets about 3 cm apart. Place in the oven and bake for 10-15 minutes until golden brown.
