Ingredients for 1 servings:
- 200 g butter
- 180 g sugar
- 1 packet of vanilla sugar
- 3 egg yolks
- 300 g flour
- 100 g potato starch
- 1 tsp, heaped baking powder
- 80 g candied lemon
- 125 g powdered sugar
- 3 tbsp lemon juice or water
- 100 g hazelnuts, chopped

Working time approx. 40 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 20 minutes
Cookies – not just for Advent
Beat the butter and sugar with an electric hand mixer until very fluffy, then alternately add the egg yolks, flour and potato flour (both sifted), baking powder and the finely chopped candied lemon peel. Knead everything together well and chill for 1/2 hour. Roll out the well-chilled dough on a surface and cut out rings. Other shapes are also possible, of course. Place the cut-out rings on a baking sheet lined with baking paper and bake at 170°C (top/bottom heat) for about 10 minutes until golden brown. Meanwhile, mix the sifted icing sugar with lemon juice or water (some people don’t like it too tart) until smooth. Once the rings have cooled, spread the icing on top and sprinkle with the chopped hazelnuts.
