Marinade for Sauerbraten …
The perfect marinade for sauerbraten … recipe with a picture and simple step-by-step instructions.
- 750 ml Water
- 150 ml Vinegar **
- 1 Bit Carrot
- 1 Onion
- 1 tablespoon Mustard seeds
- 7 Juniper berries
- 1 Bay leaf
- 1 teaspoon Peppercorns
- 1 teaspoon Coriander grains
- 1 Dried chilli pepper
- Cut the carrot into pieces and the onion into wedges. Bring the carrots, onions and all other ingredients briefly to the boil with the water and vinegar ** and then let them steep for another 10 minutes over a mild heat.
- Remove from heat and pour it over the meat when it has cooled – it should be covered with the marinade. Let it steep for a few days, turning the meat every now and then.
- If you like the sauerbraten even more sour, you can vary the water / vinegar mixture as you like.
- ** I like to use a 5% vinegar with lemon, which gives it a particularly fresh taste.
