Marinade for Sauerbraten …

The perfect marinade for sauerbraten … recipe with a picture and simple step-by-step instructions.

  • 750 ml Water
  • 150 ml Vinegar **
  • 1 Bit Carrot
  • 1 Onion
  • 1 tablespoon Mustard seeds
  • 7 Juniper berries
  • 1 Bay leaf
  • 1 teaspoon Peppercorns
  • 1 teaspoon Coriander grains
  • 1 Dried chilli pepper
  1. Cut the carrot into pieces and the onion into wedges. Bring the carrots, onions and all other ingredients briefly to the boil with the water and vinegar ** and then let them steep for another 10 minutes over a mild heat.
  2. Remove from heat and pour it over the meat when it has cooled – it should be covered with the marinade. Let it steep for a few days, turning the meat every now and then.
  3. If you like the sauerbraten even more sour, you can vary the water / vinegar mixture as you like.
  4. ** I like to use a 5% vinegar with lemon, which gives it a particularly fresh taste.
