Marinated chanterelles

Ingredients for 6 servings:

  • 400 g chanterelles
  • 1 m.-sized onion(s)
  • 100 g Tyrolean bacon
  • 8 tbsp extra virgin olive oil
  • 5 tbsp white wine, dry or sparkling wine
  • 3 tbsp vinegar (white wine vinegar)
  • 100 ml vegetable broth (instant)
  • 1 tsp mustard, medium hot
  • 1 pinch(s) of sugar
  • 1 bunch of chives

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

First, clean the chanterelles and dice the onion. Cut the Tyrolean bacon into strips and fry them in a pan with 1 tablespoon of oil until crispy, then remove from the pan. Add 2 more tablespoons of oil to the pan and fry the chanterelles over high heat until crispy, then briefly fry the onions until translucent. Season to taste with salt and pepper and deglaze with 5 tablespoons of white wine. Remove this from the pan as well. Whisk together the vinegar, vegetable stock, medium-hot mustard, sugar, 5 tablespoons of oil, salt, and pepper. Now just chop the chives into small rolls and then mix everything together – chanterelles, bacon, and chives – with the vinaigrette.
