Marinated green beans

Ingredients for 2 servings:

  • 400 g beans, green
  • 2 small shallots
  • 3 tbsp white wine vinegar
  • 1 tbsp coarse-grained mustard
  • some salt and pepper from the mill
  • 1 tsp, levelled sugar
  • 5 tbsp olive oil
  • 4 stalks of savory, fresh

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Trim the ends of the beans and remove the strings. Halve the beans and cook in boiling, lightly salted water until al dente. Reserve 5 tablespoons of the cooking water. Drain the beans in a sieve and place in a bowl. Peel the shallots and dice very finely. Mix the vinegar, mustard, cooking water, salt, pepper, and sugar together. Stir in the oil. Pour the marinade over the hot beans and mix gently. Pick the leaves off the savory, fold them into the beans, and serve while still lukewarm.
