Ingredients for 4 servings:

  • 500 g leek
  • 1 lemon(s), juice
  • 2 bay leaves
  • 1 tsp pepper, whole
  • 1 tsp allspice, whole
  • 500 ml water
  • 1 tsp salt
  • 1 pinch(s) of sugar
  • 3 tbsp capers
  • 3 tbsp olive oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Trim and thoroughly wash the leeks, then cut diagonally into 4 cm pieces. Bring water with lemon juice, bay leaves, salt, pepper, and sugar to a boil and simmer for about 5 minutes. Add the leeks and cook over medium heat for 5 minutes until crisp. Then remove and drain, divide among four plates. Mix 5 tablespoons of the still-warm cooking marinade with the olive oil and capers, drizzle over the leeks, and serve lukewarm.
