Marinated mushrooms with chili

Ingredients for 4 servings:

  • 500 g mushrooms, fresh
  • 4 garlic cloves
  • Salt
  • ½ bunch parsley
  • 3 chili peppers, red, yellow and green
  • 3 tbsp balsamic vinegar
  • 2 tbsp olive oil, cold-pressed
  • Pepper, freshly ground

Instructions

Working time approx. 20 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 1 minute; Total time approx. 6 hours 21 minutes

Clean the mushrooms and slice thinly. Peel and finely chop the garlic cloves. Cook the mushrooms in plenty of boiling salted water for about 1 minute, remove, drain, and mix with the garlic in a bowl (preferably with a lid). Wash the parsley, shake dry, pluck the leaves from the stems, and chop finely. Trim, wash, and halve the chilies, remove the stems and seeds, and add them to the other ingredients. Mix the vinegar, olive oil, and parsley well, and season with salt and pepper to taste. Pour the dressing over the ingredients and let it stand for at least 6 hours. Stir the mushrooms occasionally or shake the container. Decorate as desired.
