Ingredients for 4 servings:
- 500 g pork strips
- 150 ml olive oil
- 1 tsp salt
- 2 garlic cloves, squeezed
- 2 large onions, finely diced
- ½ tsp sugar
- 1 lemon(s), organic
- 1 tbsp cornstarch
- 1 tbsp paprika powder, sweet
- 1 tbsp paprika powder, hot
- 1 tbsp oregano
- 1 tbsp basil
- 1 tbsp thyme
- 1 tbsp black pepper, freshly ground
- 1 tsp chili flakes
- 1 pinch(s) cumin
- 1 pinch(s) cinnamon powder
Instructions

A quick, homemade gyro without the marinating time
First, prepare the marinade: Place all the dry or dried spices in a dry pan and heat until they begin to smell. Then add the olive oil, turn off the heat, and let everything warm up slightly. Stir well, then let it cool. Wash the lemon in hot water, grate and squeeze about 1 teaspoon of lemon zest. Now, in a large bowl, mix the pork strips, diced onion, pressed garlic, lemon zest, 1 tablespoon of lemon juice, the sugar, and the cornstarch. Then, mix the cooled spices with the oil and cover everything with foil and let it marinate overnight in the refrigerator. The next day, let the pieces of meat drain a little and then sear them in a hot pan on all sides. Then continue to fry for about 10 minutes over medium heat. Finally, season again with salt. This goes well with fries or flatbread, tzatziki, and a coleslaw.
