Ingredients for 1 servings:

  • 380 g flour
  • 225 g cheese, grated, e.g. Gouda
  • 75 g Parmesan
  • 340 g butter, cold
  • 2 egg yolks
  • some salt and pepper
  • Paprika powder

Instructions

Working time approx. 20 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 10 minutes

First, knead the butter, egg yolk, and spices together and refrigerate. Combine the flour with the Parmesan and cheese, then quickly knead into the butter mixture and refrigerate for another 20 minutes. Preheat oven to 180°C. Roll out the dough on a lightly floured surface, cut out shapes, and bake until golden brown. Tip: For a nice shine, whisk an egg yolk with water and brush it onto the cookies before baking. You can also moisten the cookies with water before baking and sprinkle with poppy seeds, sesame seeds, linseed, etc.
