Ingredients for 6 servings:
- 2 marrow bones
- 1 egg(s)
- Salt
- Breadcrumbs
- nutmeg
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Remove the marrow from two bones, heat until dissolved, and let cool. Then beat with an egg until frothy, season with salt and nutmeg. Then knead with breadcrumbs until small dumplings can be formed. Bring water to a boil and cook a test dumpling. If it falls apart, knead in a little more breadcrumbs. The marrow dumplings are easy to freeze. Then simply add them from frozen to the hot broth and bring the broth to a boil briefly. The dumplings will then float to the surface and are ready.
