Marzipan – Almond Stars

Ingredients for 50 servings:

  • 150 g flour (wheat flour)
  • 1 tsp baking powder
  • 1 pinch of salt
  • 80 g powdered sugar
  • 1 packet of vanilla sugar
  • 2 tbsp milk
  • 125 g butter
  • 150 g almond(s), ground, peeled
  • 200 g marzipan – raw mass
  • 100 g powdered sugar
  • 2 tbsp jelly (cherry jelly)
  • 100 g powdered sugar
  • 3 tbsp lemon juice
  • Pistachios, chopped

Working time approx. 1 hour; Rest time approx. 1 hour; Total time approx. 2 hours

a bit time-consuming, but worth it…

Combine the flour and baking powder in a mixing bowl. Add the salt, powdered sugar, vanilla sugar, almonds, and milk. Cut the cold butter into pieces and add it. Mix everything well with a dough hook and then knead by hand until you have a smooth dough. Chill in cling film for one hour. Preheat the oven to 180 degrees Celsius. Roll out the dough thinly, cut out stars, and then bake them on the middle rack for about 10 minutes. Knead the marzipan mixture with the sifted powdered sugar and roll out very thinly. Cut out the same number of stars as cookies. Spread the cooled cookies thinly with cherry jelly and place the marzipan stars on top. For the glaze, mix the powdered sugar with the lemon juice and brush the cookies with it. Decorate with the chopped pistachios.
