Ingredients for 1 servings:

  • 250 g almonds, blanched, ground
  • 250 g powdered sugar
  • 3 drops of bitter almond flavor
  • 6 tbsp rose water
  • 1 egg white
  • 2 tbsp cornstarch
  • Powdered sugar, for rolling out

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 42 minutes

Mix the almonds with the powdered sugar in a bowl. Stir in the bitter almond flavoring and rose water. Beat the egg whites and stir them into the almond mixture. Sift the cornstarch over the dough and mix it into the batter. Preheat the oven to 150°C. Roll out the dough thinly on a sheet of powdered sugar and cut out bunnies using a cookie cutter. Line a baking tray with baking paper and place the bunnies on it. Bake the bunnies at 150°C (gas mark 1, fan oven 130°C) for about 12 minutes, then remove and let cool. Tip: For a delicious confection, cover with a thin layer of chocolate coating.
