Ingredients for 1 servings:

  • 2 egg whites
  • 1 tbsp lemon juice, fresh
  • 1 tbsp vanilla sugar, preferably homemade
  • 150 g sugar, fine
  • Food coloring, green, dragee eggs, colorful liquid filled
  • Sugar icing

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Meringue, makes about 40 pieces.

Beat egg whites until stiff. Slowly add lemon juice and both types of sugar. Stir in green food coloring, if desired (this will be the grass for the Easter nests!). Using a piping bag, pipe small “nests”/circles onto a baking sheet lined with baking paper. Let dry at 80°C fan/3D for about 110 minutes. Please do not use a higher temperature, as the nests should only dry and not take on color! Now, stick the coated eggs into the nests with the icing. Very nice decoration for Easter brunch! Note: It’s worth multiplying this recipe to make better use of the oven heat. There are several recipes for using up egg yolks in the database!
