Ingredients for 1 servings:

  • 200 g flour
  • 40 g sugar
  • 1 egg(s)
  • 70 g butter
  • some apricot jam for spreading
  • Fat for the mold
  • 4 eggs
  • 200 g sugar
  • 50 ml water
  • 50 ml oil
  • 200 g flour
  • 50 g cornstarch
  • 1 packet of baking powder
  • 100 g almonds, ground
  • 600 ml cream
  • 2 packs of cream stiffener
  • 500 g mascarpone
  • 50 g powdered sugar
  • 60 g chocolate drops or chocolate sprinkles
  • 300 g marzipan raw material or 1 marzipan blanket
  • Decor of your choice

Instructions

Working time approx. 2 hours; Rest time approx. 2 hours; Cooking/baking time approx. 40 minutes; Total time approx. 4 hours 40 minutes

For a 26 cm diameter pan. For the shortcrust pastry base, mix the flour, sugar, egg, and small pieces of butter using the dough hook on a hand mixer. Knead the dough with your hands until smooth. Then wrap in cling film and chill for about 20 minutes. Roll out the shortcrust pastry and place it in a greased springform pan. Bake in a preheated oven at 180°C (fan oven) for about 20 minutes, then remove from the oven. When the base has cooled, spread with apricot jam. For the sponge cake, beat the eggs and sugar for 4-6 minutes until very creamy. Stir in the liquids on the lowest setting. Sift the remaining ingredients and fold in. Pour the mixture into the prepared springform pan and bake at 180°C (fan oven) for about 30 minutes, then let cool. For the cream, beat the mascarpone and icing sugar until smooth. Stir in the cream and cream stabilizer and whip the cream until stiff peaks form. Fold the chocolate drops into 1/4 of the cream. Cut the sponge cake horizontally into three equal pieces. Place the first cake layer on the shortcrust pastry and spread with the cream and chocolate drops. Then place the next layer on top and spread more cream on top. Then place the last layer on top and spread the cake generously with cream. Leave some cream over for decoration if desired. Now cover the cake with the marzipan layer. Drape various decorations on this marzipan layer, such as chocolate coating or cream puffs with, for example, chopped hazelnuts or almond slivers.
