Marzipan cookies

Ingredients for 1 servings:

  • 400 g marzipan paste
  • 160 g powdered sugar
  • 2 egg whites
  • 1 pinch of salt
  • 100 g almonds, ground or chopped
  • 180 g flour
  • 2 tsp baking powder

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 1 hour 8 minutes

Knead the marzipan mixture with the powdered sugar, egg whites, and almonds. Mix the flour and baking powder and sift them in. Knead everything with your hands until you have a smooth dough. If the dough is very sticky, add a little more flour. Cover the dough and let it rest in the refrigerator for about 30 minutes. Meanwhile, preheat the oven to 160°C (top/bottom heat) or 140°C (fan oven). Roll out the dough to a thickness of about 5-6 mm and cut out cookies. Due to the thickness, delicate shapes don’t work so well. Place on a baking sheet lined with baking paper or nonstick baking foil and bake for about 6-8 minutes. Then let it cool completely on a wire rack. Finally, decorate the cookies as desired.
