Marzipan cookies for cutting out

Ingredients for 1 servings:

  • 300 g butter, room temperature
  • 2 medium-sized egg yolks
  • 100 g sugar
  • 200 g marzipan
  • 500 g wheat flour
  • Flour for the work surface

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 11 minutes; Total time approx. 1 hour 51 minutes

Beat the room-temperature butter with the sugar and egg yolks until fluffy. Cut the marzipan into pieces and warm gently in the microwave to soften it slightly. Stir the marzipan alternately with the flour into the mixture. Stir until a soft shortcrust pastry forms. Shape the dough into two balls, wrap in plastic wrap, and refrigerate for about an hour. Line a baking tray with baking paper. Preheat the oven to 175°C (top/bottom heat). Roll out the dough in several portions on a lightly floured work surface. Cut out cookies and place them on the baking tray, leaving space between them. Bake in the preheated oven for about 10-11 minutes, depending on the size and thickness of the cookies. Allow to cool. Tip: Decorate as desired with chocolate, couverture, icing, sprinkles, powdered sugar, etc.
