Marzipan pistachio balls

Ingredients for 1 servings:

  • 180 g flour
  • 100 g marzipan
  • 100 g powdered sugar
  • 100 g margarine
  • 30 g pistachios, chopped
  • 1 tsp baking powder
  • 1 egg(s)
  • ½ pack of ground almonds, approx.

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Warm the marzipan to room temperature to soften it, then cut it into small pieces and place them in a bowl with the powdered sugar and margarine. Whisk in the egg and pistachios, then add the flour mixed with the baking powder until a dough forms. Then let the dough rest in the refrigerator for about 1 hour. Preheat the oven to 170°C (340°F) or gas mark 3. Divide the dough into walnut-sized pieces and shape them into balls. Roll the balls all around in the ground almonds and place them on a wire rack lined with baking paper. They will not roll away. Bake the balls for 10-15 minutes, depending on the desired firmness. This amount of dough makes about 30 cookies.
