Mashed Carrots and Potatoes with Apple Sauce

Ingredients
 

  • 1 kg Potatoes
  • 1 kg Carrots
  • 0,5 l Vegetable broth
  • 3 essl Butter
  • Salt, white pepper and some chopped parsley
  • Applesauce
  • 1 kg Apples
  • 0,2 liter Apple juice
  • Possibly sugar

Instructions
 

  • Peel the potatoes and cut into large pieces. Peel the carrots with the peeler and cut into slices. Put on the cold vegetable stock and cook for 20 minutes.
  • peel the apples, cut into small pieces and cook with the apple juice for 10-15 minutes (depending on the apple variety).
  • Also mash the potatoes and carrots with the potato masher. Add the butter and season with salt and pepper.
  • Finally sprinkle the carrot and mashed potatoes with a little parsley.
  • We had a chop with it.
