Mashed potatoes with lamb's lettuce and melted cheese

Ingredients for 1 servings:

  • 5 small potatoes
  • 1 carrot(s)
  • ½ package of processed cheese
  • 1 tsp mustard
  • 1 ½ handfuls of lamb’s lettuce
  • Parsley
  • pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

vegetarian way of using leftovers

This recipe was born out of necessity… Peel the potatoes and carrots and boil them in small pieces in salted water. Instead of milk, mash with processed cheese (I had a diet version) and 1 teaspoon of mustard. Fold in the lettuce and parsley and sprinkle with freshly ground pepper.
