Ingredients for 4 servings:
- 400 g flour
- 200 g butter
- some salt
- 125 ml water
- 200 g smoked ham, cut into fine strips
- 3 eggs
- 250 g crème fraîche
- 2 medium-sized onions, cut into rings
- Salt and pepper, white, from the mill
- some nutmeg, freshly grated
- butter
Instructions
Working time approx. 35 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 40 minutes
Lorraine ham cake
Sift the flour onto a work surface, crumble in the butter, season with a pinch of salt, and knead everything into a smooth dough, gradually incorporating the water. Let the dough rest for 30 minutes. Then press it into a greased fruitcake tin, springform pan, or quiche dish, pierce several times with a fork, and bake in a preheated oven at 180 degrees Celsius for about 5 minutes. Blanch the ham strips in boiling water for 2-3 minutes, remove, mix with the onion rings, and spread on the pastry base. Crack the eggs, whisk with the crème fraîche, season with salt, pepper, and nutmeg, and pour the mixture over the pie. Bake in a preheated oven at 180 degrees Celsius for about 30 minutes. Serve warm.
