Mashed potatoes with spring onions and bacon

Ingredients for 1 servings:

  • 225 g potatoes, peeled
  • 1 tsp butter
  • 75 ml milk, maybe a little more
  • 1 spring onion(s), cleaned, approx. 25 g
  • 50 g bacon (strips)
  • 1 slice(s) cheese of your choice, approx. 50 g
  • Herb salt and pepper, white
  • nutmeg
  • chili flakes

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Dice the potatoes and add them to a pot of salted water, bring to a boil, and cook for about 20 minutes. Meanwhile, halve the bacon strips, slice the spring onion, and sauté both together with butter in a pan over medium heat until lightly browned. Cut the cheese into strips and then into cubes approximately 0.5 x 0.5 cm in size. Drain the cooked potatoes, return the pot to the stove briefly to allow the steam to escape, and then mash them with a potato masher. Stir in the milk, adding a little more if necessary until the mash reaches the desired consistency. Stir in the sautéed onion, bacon, and butter mixture, then add the seasonings and mix well. Season to taste and fold in the cheese. Season the mash again and adjust the seasoning if necessary.
