Ingredients for 4 servings:

  • 8 matjes fillet(s), 30 g each
  • ¼ liter of milk
  • 3 onions
  • 2 apples, sour
  • 1 tsp juniper berries
  • ¼ liter sour cream
  • 3 tbsp mayonnaise
  • 1 lemon(s), juice
  • salt and pepper
  • 1 pinch(s) of sugar
  • Herbs (parsley and dill)

Working time approx. 25 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 25 minutes

simple way

Place the herring fillets in cold water and then cut into pieces. Peel and finely chop the onions and apples. Combine the milk with the sour cream, mayonnaise, and lemon juice, and season with salt, pepper, and sugar. Add the herring fillets to the sauce along with the onions, apple pieces, and juniper berries. Let the herring marinate in the refrigerator for 3-4 hours and season again to taste. Sprinkle with parsley and dill just before serving. Serve with boiled potatoes or a baguette.
