Ingredients for 6 servings:

  • 12 herring fillets (salt herring fillets) or herring fillets
  • 200 ml whipped cream
  • 200 g Greek yogurt
  • 200 g sour cream
  • 200 ml milk
  • 125 ml herbal vinegar 5%
  • 3 tbsp cucumber water
  • 4 m.-sized onion(s)
  • 4 bay leaves
  • 1 tsp pepper
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 tsp mustard seeds
  • 1 tsp dill
  • 1 tsp ginger
  • 1 tsp chili
  • 1 tsp juniper berries
  • 1 tsp all-spice
  • 2 apples
  • 6 gherkins

Instructions

Working time approx. 30 minutes; Rest time approx. 3 days 6 hours; Total time approx. 3 days 6 hours 30 minutes

Salted herring or matjes

Soak the herring fillets in water for at least 6 hours, changing the water frequently or using ready-made matjes fillets. For the marinade, combine sweet and sour cream, yogurt, milk, vinegar, and all the spices in a bowl. Peel the apples and cut into small pieces, and also cut the gherkins into small pieces. Stir the apples and gherkins into the marinade. Peel the onions, halve them, and cut them into half rings. Now alternate layers of onions, marinade, and fish fillets into a suitable container. Note: The quantities given for 6 servings result in a volume of approximately 2 liters. Now just put the lid on and let it marinate in the refrigerator for 2-3 days. This goes best with boiled potatoes.
