Matjes and bean salad

Ingredients for 4 servings:

  • 8 herring fillets
  • 500 g green beans, e.g. princess beans
  • 1 bunch of savory
  • 2 shallots
  • 3 spring onions
  • 8 slices of breakfast bacon
  • olive oil
  • lemon juice
  • Clarified butter
  • salt and pepper
  • some sugar, maybe

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Potatoes/fried potatoes can be served as a side dish

Cut the herring fillets into bite-sized pieces. Trim the beans and cook in salted water until al dente. Peel the shallots and cut them into long slices. Remove the outer skin and the root end of the spring onions. Cut the upper green part into very fine rings, and cut the white part into larger pieces. Heat a little clarified butter in a pan and sauté the spring onions for about 2 minutes. Sprinkle with a little salt and sugar. Fry the bacon in a non-stick pan without adding any fat until crispy, then drain on kitchen paper. Mix the herring, beans, savory, and spring onions in a large bowl. Season with a little olive oil, lemon juice, ground pepper, and salt, but be careful, as the herring already has a salty flavor. Break the crispy bacon slices into pieces and arrange them on the salad. If you like, you can serve it with new potatoes or warm fried potatoes.
