Matjes bites with mustard

Ingredients for 4 servings:

  • 2 packs of herring fillet(s)
  • 2 m.-sized onion(s)
  • 4 gherkins
  • 2 tbsp mustard (horseradish mustard), mild
  • 1 tsp sugar or other sweetener
  • ½ lemon(s), juice
  • 1 tbsp oil (Alba oil)
  • 1 pinch(s) of pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Combine oil, lemon juice, mustard, sweetener, and pepper in a bowl. Cut the herring fillet into bite-sized pieces and add it. Finely grate or chop the gherkins and onion. Mix everything together and let it sit in the refrigerator for at least two hours. These herring bites taste fantastic with whole-grain bread and potatoes. 360 kcal per serving.
