Ingredients for 4 servings:

  • 1 apple, sour, e.g. Boskoop
  • 100 ml white wine
  • 4 herring fillets, fresh
  • 6 tbsp cranberries
  • 150 g crème fraîche

Small North German delicacy for dear guests

Peel the apple and core it with an apple corer. Cut the apple into 4 slices and sauté them in white wine until soft, making sure they don’t fall apart. Let them cool in the liquid, collect the liquid, and place the drained apple slices on a platter. Roll up a herring fillet and arrange upright on an apple slice (using a wooden skewer if necessary). Add 1.5 tablespoons of cranberries to each herring roll. Mix the crème fraîche with a little white wine liquid and drizzle over the herring fillets just before serving.
