Tagliatelle with walnut sauce

Ingredients for 4 servings:

  • 200 g walnuts
  • ½ bunch parsley, flat-leaf, coarsely chopped
  • 200 ml olive oil
  • 2 cloves garlic
  • 150 g crème fraîche
  • 50 g Parmesan
  • 400 g tagliatelle or other pasta

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Roast the walnuts in a pan without adding any fat or oil for about 2 minutes until light brown and let cool. Then chop the parsley in a food processor and, with the motor running, add the olive oil. Finally, stir in the garlic, Parmesan cheese, and crème fraîche. Season to taste with salt and pepper. Cook the pasta al dente according to the package instructions. Drain, stir in the sauce, and serve.
