Matjes in dill cream

Ingredients for 2 servings:

  • 2 matjes fillet(s) (double fillets) or 1 package of herring matjes style
  • 1 cup sour cream
  • ½ cup sweet cream
  • 2 gherkins
  • 1 apple
  • 1 onion(s)
  • ½ bunch dill, alternatively frozen
  • salt and pepper
  • Vinegar
  • possibly cucumber juice

Instructions

Working time approx. 15 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 15 minutes

Whisk the cream and sour cream in a bowl until smooth. Peel, quarter, and slice the apple. Peel the onions and slice them. Slice the cucumbers and mix them with the apple and the sour cream. Season generously with pepper and vinegar or pickle juice, if desired. Chop the dill and fold in. Rinse the herring and cut it into bite-sized pieces, then stir it into the sauce. Season again, adding a little salt if desired. Let it sit for a few hours.
