Ingredients for 4 servings:

  • 2 apples, sour (e.g. Boskoop)
  • 4 gherkins
  • 2 onions
  • 150 g sour cream
  • 250 g low-fat yogurt
  • 1 tsp mustard
  • 1 tsp pepper, coarsely ground
  • 1 tsp mustard seeds
  • salt and pepper
  • n. B. Sweetener, a few drops
  • 3 herring (matjes herring) of 80 g each
  • 1 kg jacket potatoes, freshly cooked
  • 350 g beetroot (canned)

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Dice the apples and cucumbers, and finely chop the onions. Combine the sour cream with the yogurt, mustard, pepper, and mustard seeds, and season with salt, pepper, and sweetener. Stir in the apple and cucumber pieces and the onions. Drain the herring, place them in a bowl, and cover with the sauce. Let it sit in the refrigerator for about 1 hour. Serve the herring fillets with the sauce and serve with boiled potatoes and beets.
