Matjes salad

Ingredients for 4 servings:

  • 750 g potato(s) (salad potatoes)
  • ½ bunch radishes
  • 1 apple
  • ½ lemon(s)
  • 1 onion(s)
  • 100 ml broth
  • 2 tbsp fruit vinegar
  • 3 tbsp oil
  • e.g. salt and pepper
  • 1 pinch(s) of sugar
  • 150 ml natural yogurt
  • 1 tsp horseradish (jar)
  • e.g. lemon juice
  • 400 g matjes fillet(s)
  • ½ bunch chives

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Cook the potatoes, drain, and peel. Cut the radishes into sticks. Dice the apple with the skin on, remove the core, and blanch in boiling lemon water. Cool and drain well. Slice the potatoes. Peel and dice the onion and add it to the potatoes. Pour in hot stock (amount depends on the type of potato), vinegar, and oil, and season with salt, pepper, and sugar. Let it simmer. Mix the yogurt with the horseradish and season with salt, pepper, and lemon juice. Cut the herring into pieces and roll the chives. Mix the salad with the radishes, herring, apple, and chives.
