Ingredients for 6 servings:
- 600 g matjes fillet(s)
- 2 small onions
- 1 apple
- 2 jars of salad cream, yogurt
- 150 ml cream
- 1 jar of pickles
- 150 g meat sausage
- 2 eggs, boiled
- salt and pepper
Instructions
Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes
Wash the herring fillet and pat dry, then cut into small cubes and place in a large bowl. Peel the onions and dice them as well as the apple (peeled or unpeeled, depending on your preference) and add them to the bowl. Dice the sausage, eggs, and gherkins and add them to the remaining ingredients. I usually start with three large gherkins and then see if that’s enough. Now mix the salad cream with the cream and add a little pickle juice to taste. Mix everything well and then pour over the herring mixture. Stir well and let it marinate. It tastes best after 24 hours, but even after 2 hours it will still be well-marinated. We always eat the salad with baked potatoes with rosemary salt, but it’s also a hit at parties.
