Colorful salad with gratinated goat cheese, figs and a balsamic-chocolate dressing

Ingredients for 4 servings:

  • 60 g dark chocolate (at least 70% cocoa)
  • 140 g cane sugar
  • 150 ml orange juice
  • 100 ml balsamic vinegar
  • 1 sprig(s) rosemary
  • 200 g goat cheese roll
  • 1 tbsp honey
  • 300 g mixed leaf salad (e.g. lamb’s lettuce, radicchio, baby spinach, arugula)
  • 200 g cherry tomatoes
  • 4 figs
  • salt and pepper
  • chili flakes

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

great starter for Christmas or other festive occasions

Grate the chocolate. In a saucepan, heat the sugar, orange juice, and vinegar while stirring until the sugar has dissolved. Simmer for about 5 minutes. Add the chocolate and melt while stirring. Season with salt, pepper, and chili flakes. Let the dressing cool. Preheat the oven to 180°C (conventional oven: 160°C). Rinse the rosemary, shake dry, pluck the needles, and roughly chop. Cut the goat cheese into 8-12 slices, place on a baking sheet lined with baking paper, and brush with honey. Sprinkle the rosemary on top and bake in the oven for about 10 minutes. Meanwhile, sort, trim, wash, and spin dry the lettuce. Wash and quarter the cherry tomatoes and figs. Arrange the prepared salad ingredients and the gratinated goat cheese on the plate and drizzle with the balsamic chocolate dressing if desired. Fresh baguette goes well with it.
