Ingredients for 8 servings:

  • 125 g spice(s) (Mauby bark, see note*)
  • ½ cinnamon stick(s)
  • 1 tbsp allspice
  • 1 carnation(s)
  • 3 bay leaves
  • 250 g sugar

delicious, slightly bitter soft drink from the Caribbean

For this version from the Virgin Islands, combine all the spices in two liters of cold water. Heat and simmer for half an hour. Strain through a cheesecloth and discard any solids. Add the sugar and heat again until completely dissolved. Increase the amount of sugar to taste. Let cool and serve with ice cubes. If you like, you can also add a splash of Angostura or lime juice. *Note: Mauby is a popular refreshing drink throughout the Caribbean. The main ingredient is the bark of the Mauby tree. The other spices can vary. In Trinidad, for example, cinnamon is not used, but aniseed is added. Tip: If you travel to the Caribbean, you can find the appropriate spice mix pre-packaged. If you’re really lazy, you can also buy bottled Mauby syrup, which then only needs to be topped up with water.
