May cake with jelly

Spread the love

Ingredients for 1 servings:

  • 4 eggs
  • 9 tbsp sugar
  • 9 tbsp flour
  • 1 tsp baking powder
  • 9 tbsp oil
  • 500 g quark
  • 150 g sugar
  • 500 ml cream
  • 1 pkt. jelly (2 bags each), green (not instant!)
  • 1 cup of water (approx. 125 ml content)

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 55 minutes

For the base, vigorously whisk together the eggs, sugar, flour, baking powder, and oil. Pour the batter into a prepared 26cm springform pan. Bake for approximately 30-35 minutes in a preheated oven at approximately 190°C (top/bottom heat). For the topping, whisk the quark and sugar until fluffy. Dissolve the jelly in a cup of hot water, let it cool slightly, and then stir it into the quark mixture while it’s still lukewarm. Finally, fold in the whipped cream. Pour everything onto the base and let it cool. It looks great for Easter. For children’s birthdays, you can add gummy bears on top for a colorful touch. It tastes lovely and fresh, especially in summer.
