Meat: Braised Leg Slice in Baked Fruit Sauce
The perfect meat: braised leg slice in baked fruit sauce recipe with a picture and simple step-by-step instructions.
- 2 piece Beef leg slices approx. 1.5 kg
- 1 bunch Soup vegetables fresh
- 1 piece Fresh onion
- 2 tablespoon Flour
- Black pepper from the mill
- 1 tablespoon Clarified butter
- 1 handful Dried fruits – here: cranberries, apricots, dates, plums, figs
- 50 ml Metaxa or brandy
- Cut the fruits into small pieces and marinate in the Metaxa for about 4 hours.
- Clean and roughly dice the soup vegetables and onions.
- Generously pepper and flour the leg slices.
- Heat the clarified butter in a pan and sear the meat on all sides. Now add the soup vegetables and the onion and roast a little.
- Pour water over, cover and let simmer at low temperature for about an hour.
- After this time, add the pickled fruit and alcohol and stew covered again for an hour.
- Remove the meat from the sauce and keep it warm.
- Pass the sauce through a sieve and season with salt and pepper. Possibly add a shot of Metaxa.
- Now detach the meat from the bone – in my case it fell off voluntarily – and serve with dumplings and the sauce.
