Meat dumplings

Ingredients for 3 servings:

  • 1 m.-sized onion(s)
  • ½ bunch parsley, fresh
  • 25 g butter
  • 3 tsp, heaped flour
  • 30 ml milk
  • 300 g veal sausage meat
  • 3 m.-sized eggs
  • e.g. salt and pepper
  • e.g. lemon juice
  • nutmeg
  • Thyme
  • 3 tbsp, heaped breadcrumbs
  • 1 ½ liters of meat broth for cooking

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 5 minutes

First, finely dice the onion, chop the parsley, and sauté both together in the melted butter. Add the flour and sauté briefly until thoroughly mixed, then deglaze with the milk and mix into a dumpling. Let cool slightly. Then add the sausage meat, eggs, spices, lemon juice, and breadcrumbs and mix until smooth, either by hand with a strong whisk or with a hand mixer. If you like, you can taste the mixture to see if any seasonings are missing. After letting it soak for about 30 minutes, form dumplings of any size using teaspoons, tablespoons, or by hand and cook them in the simmering meat broth for 10-15 minutes. The larger the dumplings, the longer the cooking time.
