Meatball with zucchini

Ingredients for 1 servings:

  • 75 g tartar (beefsteak mince)
  • 1 tbsp quark (cream quark, 0.2% fat)
  • salt and pepper
  • garlic powder
  • 200 g zucchini
  • 125 g carrot(s)
  • 125 g potatoes
  • ½ cup vegetable broth
  • 1 tsp oil
  • ½ bunch parsley

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Knead the minced meat with quark and spices, then form a meatball. Clean and chop the vegetables and potatoes. Cook in vegetable broth for 10-15 minutes. Fry the meatball in oil. Garnish the vegetables and meatball with parsley.
