Meatballs with roasted potatoes from the tray

Ingredients for 4 servings:

  • 800 g potatoes
  • 100 g smoked bacon, streaky
  • 2 tbsp olive oil
  • 5 radishes, approx. 120 g
  • 1 onion(s)
  • 600 g minced meat, mixed
  • 1 egg(s)
  • 1 tbsp mustard
  • 2 tbsp breadcrumbs
  • 2 tbsp sunflower oil
  • Salt and pepper, black
  • 1 pkt. herb curd, 200 g

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Peel, wash, and dice the potatoes. Finely dice the bacon. Place the potatoes and bacon on a baking sheet lined with baking paper, drizzle with olive oil, and season with salt and pepper. Bake the potatoes in a preheated oven (electric oven: 200°C, fan oven: 175°C) for about 20 minutes. Trim and halve the radishes, and after about 10 minutes of cooking, add them to the oven with the potatoes. For the meatballs, peel, halve, and finely dice the onion. Mix the minced meat, onion, egg, mustard, and breadcrumbs together, and season with salt and pepper. Form the minced meat into 4 equal-sized meatballs. Heat the sunflower oil. Fry the meatballs in it for about 4 minutes on each side, then remove. Serve the meatballs with the potato and radish mixture. Serve with the herb curd. With 4 servings, each serving has 740 kcal.
