Meatballs with vegetables

Ingredients for 4 servings:

  • 500 g minced meat
  • 1 roll, stale
  • 1 egg(s)
  • 2 bell peppers, red and yellow
  • 1 small zucchini
  • 2 onions
  • 2 can/n tomatoes, (pizza tomatoes) or alternatively 2 packs of pureed tomatoes
  • salt and pepper
  • Spice(s) as desired
  • Broth, granulated
  • Sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Season the minced meat with salt, pepper, and spices to taste (e.g., paprika, various herbs), then mix with the egg and the soaked, squeezed-out bread roll. Shape the meat dough into balls and place the balls in a large, shallow baking dish. Cut the prepared peppers, zucchini, and onions into larger pieces and add them to the meatballs. Season the pizza tomatoes with granulated broth and a little sugar, then pour over the meat and vegetables. Cook in a preheated oven at 175°C (top/bottom heat) for about 1 hour. Stir gently 1-2 times. The vegetables will stay nice and crisp. Serve with rice!
