Baked goat cheese on pepper salad

Ingredients for 2 servings:

  • 120 g cheese (goat cheese)
  • 4 sprigs of thyme
  • 4 tbsp liquid honey
  • 2 bell peppers, red and yellow
  • 1 tsp olive oil
  • 100 ml vegetable stock
  • 2 tbsp balsamic vinegar
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the cleaned bell peppers into wide strips. Heat oil in a non-stick pan and fry the bell pepper strips. Deglaze with vegetable stock, remove from the heat, stir in the balsamic vinegar, and season with salt and pepper. Cut the goat cheese into two slices and place in a small baking dish. Strip the leaves from two thyme sprigs, mix with honey, and sprinkle this over the goat cheese. Bake at 230°C (fan oven) for about 5 minutes until golden brown. Arrange the baked goat cheese on top of the lukewarm bell pepper salad, garnish with the remaining thyme, and serve. Serve with baguette.
