Meatloaf a la Maja or 'False Hare with a twist'

Ingredients for 7 servings:

  • 1 kg minced meat (also turkey mince)
  • 2 onions
  • 1 clove(s) garlic
  • 250 ml white wine
  • 1 tbsp instant broth
  • 1 bread roll, dried
  • 2 tsp sweet paprika powder
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp parsley
  • 1 tsp chives
  • 2 eggs
  • 3 eggs, hard boiled

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

First, peel the onions and garlic and dice them as finely as possible (I now have a small food mill for this). Now mix the minced meat with the spices, the 2 raw eggs, and the herbs. Briefly sauté the onions and garlic in white wine in a preheated pan, then add these to the minced meat. In the meantime, hard-boil the other 3 eggs (10 minutes is enough). Now place 3/4 of the minced meat into a baking dish and make 3 small indentations with a spoon. Press the peeled eggs into these indentations and then cover with the remaining minced meat. Finally, bake everything in an oven preheated to 180°C for about 45 minutes. It tastes great with dumplings. You can also use the unwiped pan to conjure up a perfect white wine gravy. To do this, simply return the pan to the stovetop without wiping it down, add about 300 ml of white wine, and stir in a cup of sour cream. This time I added an extra packet of gravy to thicken it and seasoned it with a little salt and pepper.
